Tips for preserving vegetables in the freezer
Vegetables such as amaranth, spinach, jute… can still be stored in the freezer, but you need to do it a little differently to keep the vegetables green and fresh and not soggy or crushed after defrosting.
First, you also prepare the vegetables, cut them into about 2cm pieces and blanch them in boiling water with a little salt. Take it out and immediately put it in a bowl of ice water. This method helps preserve the color of the vegetables.
Next step, take a ladle and scoop all the water, ice and vegetables into a zip bag and immediately place it in the freezer. Bags of vegetables, when frozen in this case, will still retain their green, crunchy, freshness for several months.
When you want to eat, take the bag out to defrost. After stir-frying shrimp, meat or stewing bones, add just a little water, boil and then pour in the bag of water and vegetables. Boil until the soup boils again, then turn off the stove. In this way, even though the vegetables are frozen, when cooked, they will still be as green and delicious as fresh vegetables.
